Post Christmas Dinner with UPSCAn's / 12-26-12

Dessert comes first, but that's just me.
Table setting
Starters - Tuna-Capers Spread on Garlic Toasts
& Blue Vodka 7 (but I used Sprite)
King Sue Chinese Ham and Magnolia Queso de Bola
( I ran out of Marca Pina. This cheese came from the office.)
Roasted Rosemary Parsley Chicken
Pancit Bihon by Ado. (too tired to make pasta)
Pata Tim by SIL
 
Dessert Table - Kiatkiat (mini oranges) my favorite; Green Fruit Salad,
Mango cake from TCB and some Hershey chocolate bells.

Marge - fried chicken & vegetable salad.
Jaime - carrot cupcakes.
Jun Bautista - decadent chocolate cake.
Others brought Wine and Chocolates.

Tuna-Capers Spread, another healthier option


Still another healthier option.
Here are the ingredients.
Chop the capers finely. Add the tuna and mayonnaise or sandwich spread.
Mix thoroughly. Season with salt, pepper and sugar.
Put the mixture in your most festive bowls.
Refrigerate before serving.
Top with red or black caviar.
 
Serve cold with crackers, Sky Flakes, or garlic toasts.
Enjoy !

Carrot Salsa, a healthy option

After indulging and stuffing our pie holes with ham,edam, pasta and fruit salad,
I thought of a healthier appetizer / starter for the San Andres dinner. 
The usual peanuts and cashew nuts are too heavily laden with uric acid,
which could only worsen the pain from my trigger fingers and  arthritis.
Carrot Salsa
These are the ingredients. Mince the garlic,onions, and
tomatoes.  Wash, dry and chop the cilantro.
Saute the garlic in a little bit of oil until  brown.
Add the tomatoes and onions.
Add tomato sauce and 1 jar of Tostitos salsa.
Turn off the heat. Set aside for a couple of minutes before putting the carrots.
Add the grated carrots once salsa is cool.
Season with salt, pepper and sugar,
Add the finely chopped cilantro. Keep refrigerated.
Serve the carrot salsa with corn chips, or nacho chips.
Enjoy!!!

Christmas Lunch / Dec 18, 2012

 
 
I prepared a Christmas Lunch for a dear old friend, Debbie.
It was also a get together of the travel buddies, but,
most of the travel buddies were quite busy that day.
Cynthia, Malu and Swanee were at work. Angela was busy with her
balikbayan siblings. Only Jannette, Bubut & Yayo joined us for lunch.

Yayo & Bubut arrived late. Debbie had to leave early.
Better late than never.
...with my pretty travel buddies, aren't they just lovely?
We'll have another get together,
 maybe after the hustle and bustle of the holidays.
