How to prepare a simple Thai lunch

Pomelo Salad
Tom Yum Soup
Chicken Curry

We brought home a lot Golden pomelo from our weekend trip in Davao.
So, I thought of making Pomelo Salad for lunch. 
Tom Yum Soup and Chicken Curry are just the perfect dishes 
to  make for this simple Thai lunch.

Tom Yum Soup
Boil 2 cups of water.
Add the store bought Tom Yum Paste.
While waiting for the water to boil, slice the tomatoes & peppers.
 Chop the cilantro & spring onions.
Add the shrimps once the water starts  boiling.
Add fish sauce.
After a few minutes, add the sliced peppers and tomatoes.
Once the shrimps have changed its color, you my add the green chilies. 
Turn off the heat before adding the cilantro and spring onions.
Serve HOT!!!

Pomelo Salad
Prepare the lettuce,  add sliced tomatoes. chopped peppers, cilantro
and spring onions. Peel the pomelo and place on top
of the other vegetables. Top with cooked and peeled shrimps.
Dressing is made of shrimp broth, sweet chili sauce, fish sauce, sugar, vinegar,
peeled shrimp, cilantro and spring onions.

Chicken Curry
Saute the minced garlic, sliced onions and ginger.
Add fish sauce.
Add the store bought curry paste when chicken is haLF COOKED.
Add coconut milk.
Add potatoes.
Let the chicken simmer for the next thirty minutes or until the 
chicken is well cooked and the potatoes are fork tender.
Then, you may add the red and green pepper.
Add green chilies.
Serve with rice.
This was my lunch. 
Didn't measure the rice nor prepare soup in a bowl.
I was famished. Son  ate ahead and left for school.
Hubby isn't home for lunch.
