Today's Lunch
Pancit Molo Soup
Sweet Potato & Apple Salad
Pan Fried Beef Sirloin

Sweet Potato & Apple Salad
Scrub the sweet potatoes then boil for 30 minutes
or until fork tender.
Set aside and cool the sweet potatoes.
You will need apples, cooked sweet potatoes & mayonnaise
or sandwich spread.
Dice the sweet potatoes.
Remove seeds of apples.
Dice the apples.
Put apples and sweet potatoes in mixing bowl.
Add a teaspoon of pickle relish.
Add a teaspoon of sugar and a pinch of salt. Mix well.
Add 2 tablespoons of mayonnaise or sandwich spread.
Add a teaspoon of prepared Hickory honey mustard.
Put salad in serving bowl and chill in refrigerator.

Pancit Molo Soup

Here is what you will need.
I  prepared the meat filling for the dumplings by
mixing together ground meat (pork or beef), minced onion & a raw egg.
Season with salt, sugar and pepper.

Molo wrapper, meat mixture & bowl of water.
Place a teaspoon of the meat filling in the center of the molo wrapper.
Dampen with dab of water.
Fold  the wrapper.
Fold again. If you cannot then you placed too much meat filling.
Twist the edges to form these dumplings.
Another way.
Make a triangle.
Fold the sides towards the center. You may crimp the edges.
This method is faster.

Boil 4 cups of water.
Put chopped onion.
Add 1 tablespoon of chicken powder.
Add fish sauce.
Add the dumplings.
Add kasubha.
Boil for 5 minutes or until the dumplings float.
Serve hot. That's how the Hubby and Son like their soup.
Piping HOT!
Serve the salad cold as a side dish for the Pan Fried Beef Sirloin.
Lunch is served.
The rest of the beef were still frying.
Hubby and Son started eating without me.
