Chinese Ham

Whether you prefer the original authentic Jinhua Chinese Ham that is sold in Binondo
or a King Sue Ham sold in the grocery stores, here is the procedure
on how to cook Chinese Ham for your Noche Buena.
Scrape off molds and wash/brush the ham.
Soak the ham in pineapple juice or four seasons juice for 24 hours.
Make sure to remove the paraffin wax that coats the King Sue Ham before soaking.
Boil the ham for 2 to 3 hours. You may add some peppercorns, bay leaves and sugar.
After boiling, remove the thick skin of the ham.
Put brown sugar on top of the ham and use a torch to caramelize the sugar.
Chinese Ham is best served with Edam Cheese
/ Queso de Bola and Hot Pandesal.
Perfect for Noche Buena!
