Turkish Ice Cream on the streets of Macau

I'm sure the oldies like me are familiar with the pranks
and funny antics that a Turkish  Ice Cream vendor / salesman 
can do for his young customers, but the Son isn't.
So when I saw this ice cream man just sitting around
with no customers lining up, I just had to ask the Son
to buy some ice cream.  
You don't have to go to Istanbul to witness this 
entertaining prank.  There's one Turkish guy on the
streets of Macau.

Son's reaction was priceless.  He had a real big smile 
and was quite amused with the guy.
Son said, "I know why the ice cream cone doesn't fall
off from his long metal rod /or spatula,  the ice cream
is extremely thick."

 I googled the ingredients when making Turkish Ice cream.
Here they are:
180ml water
100ml white sugar
150g lemon turkish delight, chopped into small pieces for quicker melting
250ml bulgarian yoghurt (Greek or double-cream yoghurt for a creamier result)
250ml fresh buttermilk
2 heaped teaspoons finely grated fresh ginger (peel before grating!)
2 heaped teaspoons finely grated lemon rind
60ml freshly squeezed lemon juice

So that's what makes the ice cream chewy.
